Stewing Meat
Green Peppers
onion
Spaghetti sauce of your choice
cut up everthing and let it cook all day (the meat will melt in your mouth) on low, then serve over rice.
Nothing fancy but we like it.
You know I have a fix it and forget it cook book (it's designed for crook pot cooking,even has cakes in it) but I've never really looked in it for anything.

This is a favorite at our house. I know the ingredients sound strange but all I can say is try it....it's awesome. If you are only cooking for 2 or 3 you can use half the chicken, cook on low instead. By the way....I always make the full recipe because it's a great left-over dish....and my family hates left-overs! :eating:
Crock Pot Chicken
2 packages skinless bonless chicken (I would guess about 2 lbs)
8 oz Russian dressing
16 oz Apricot-pineapple jelly
1 package onion soup mix
1/4 cup brown sugar
Simply combine everything in crockpot and mix...then add chicken.
Cook on high for 4 1/2 hours stiring occasionally.
Serve over rice.

I love my crock pot! My favorite is boneless pork chops and spaghetti sauce or just diced tomatoes. Throw em in, cook on low 6-8 hours and the pork melts in your mouth!

Sorry I don't have specific measurements... I always just throw it together by looking at the ingredients and trying it. :) It's nice to make on a cold winter day... I made it once before some of us went snow tubing and we came back and ate it... warmed us right up. :)
chicken brooth
boneless chicken breasts (2 pounds or so)
seasonings (whatever you like... i usually put in salt, pepper, rosemary, italian seasoning)
potatoes
carrots (i love the baby carrots in this recipe)
corn
flour
egg noodles or pasta noodles
Turn crock on low heat and put in liquid brooth, seasonings, and uncooked chicken breasts. Cook for at least 6 hours (I do this before work, so when I come home it's ready for me to do the rest). Take chicken out, cut up. Add carrots and cut up chicken... cook for 30 minutes. Add cut up potatoes and corn. Also add flour mixture (just put about 2 T. of flour into a glass of water and mix real good, you don't want any chunks... this thickens the soup). Cook for 30 minutes, then add noodles. Cook 30 more minutes.

Here's a real easy one for swiss steak:
Steak pieces (any cut)
1 can of tomato soup
dash of soya sauce
1 large onion sliced
If you want the whole meal in one pot toss cut up potatoes and carrots on top.

I live alone and just cooking for one has been a problem for me, I have a large crock pot I occausionally use for me and my son's family. I bought a 2qt crock pot just for me and looking forward to trying these receipes.

Seem to be the best thing for crock pot recipes, although you could also do Red beans in your crock pot too.
For beef stew:
brown your beef tips with a little onion, in a skillet first, and then put into the crock pot. Add your stewed tomatoes with salt and pepper to taste, and add also to that, some water and tomato paste. let it cook for a while, then add your carrots, ( I like to buy the baby carrots, ) or cut up your carrots whichever you prefer, add potatoes , and let the pot do the work. Also I like to brown a small roast, and then put it into the crock pot to with carrots and potatoes.
For the red beans, they are best when soaked over night in water, then cooked the next day with a couple of pieces of bacon in it for flavor. Later you could add sausage, and then add corn bread, and fried potoes with that and that would be all you needed.

Well, this isn't a crock pot recipe, but it's a great comfort food casserole:
TaterTot Casserole
1 lb ground meat
1 bag ore ida tater tots
1 bag velveeta shreds cheese
1 can cream of onion soup
salt/pepper/garlic powder
Preheat oven to 350
brown ground meat, drain off fat and add cream of onion soup, salt pepper and garlic powder.
Layer the ground meat onto bottom of casserole dish.
Add 3/4 of the velveeta cheese.
Add a layer of tater tots so that they cover the entire dish.
Sprinkle with the rest of the velveeta cheese
Bake at 350 for 30 minutes or until cheese is melted and tater tots are cooked.
This is so simple and easy and my kids love it. I cook it at least once a week and I usually cook up some green beans to go with it to counteract all the carbs! Definelty NOT for someone wanting to count carbs! The leftovers taste great the next day!

This is one of my favorite recipes...The meat is super tender & it is also great for leftovers, pot roast again or beef sandwiches! :D
POT ROAST
4 POUND ROAST (angus beef is nice)
2 cups of coffee
2 cups of water
2 packages of Lipton Golden Onion Soup
1 large Yellow Onion, sliced in quarter inch rings
1 package of baby carrots
Pour 2 cups of coffee in crock pot. Place Roast in crock pot. Pour one package of onion soup on roast and rub it around. Then pour in all of the water. Put about 3/4 bag of carrots in surrounding the roast. Pour the second packet of soup in the pot (doesn't really matter how or where). Make sure the roast is covered in liquid other than about an inch at the top. You can pour coffee or water to fill the remainder...Top off the roast with all of the onion slices. Turn on the crock pot on low for eight hours.
To make Gravy, buy the McCormick's Brown Gravy mix. Make as it says, but substitute one cup of cold water for the broth out of crock pot. Make sure onions and carrots stay out...Make sure to not have the stove on low until you slowly mix in the broth. Be careful with the gravy. It can clump and burn very easily.
Homemade mashed potatoes are great with this, as well as the cooked carrots for the veggies!!

I have at least 10 crockpot cookbooks of various sizes (with a couple of "healthy crockpot" versions) and I crockpot probably twice a week (love the new crockpot liners!). However, my favorite, quickest "recipe" is to throw in chicken quarters, chicken breasts, pork chops, steak, or other meat of choice, and dump a can of cream of mushroom, cream of chicken, or cream of celery soup on it and cook on low all day. You can add other things, too, as your creativity desires. Makes extremely tender meats with "gravy" to serve over rice, potatoes, or noodles. So easy to assemble in the early AM! I have 3 sizes of crockpots and would never be without one. You can also add about a cup of barbecue sauce for the final hour, instead of adding any of the soup, for barbecue chicken, pork chops, or whatever.
For a version of "rotisserie chicken," I ball up 3-4 balls of aluminum foil and set my whole chicken on top of the foil (you can add fresh rosemary under the skin or whatever seasonings you desire). Then just let the chicken cook on low for 8 hours and voila - rotisserie chicken. (The breast is more tender if you set the chicken on top of the foil balls with the breast on the bottom.)
Incidentally, I need a new lid for my 5-quart Rival. Anyone know where I can get one at a reasonable price? (The "handle" is partially separated from the lid portion; super glue didn't hold. Any ideas?)

Funny enough, I live alone too and am looking for a larger crock pot. I plan to make a big batch of something and freeze portions for those days I don't want to cook. Too bad we weren't closer, we could just swap.
I saw a commercial once over the weekend for disposable liners for crock pots. I assume it will be a while before they reach Canada, but I would be interested in reviews if anyone tries them.

Have you tried EPOXY? I always used super glue until my husband introduced me to the world of EPOXY. Works great for plastics and glass and I even fixed my microwave oven handle with it.

They are wonderful - but then, I'm usually not too diligent (or prompt) when it comes to dishwashing, so I love them! You only get 3 bags to a box, but still, they save a LOT of scrubbing, if you're dishwashing-challenged, as I am.

I also cooked Quavec's tater tot casserole, and it is wonderful! It was so easy to make, and tasted great. I had to use cream of mushroom soup instead of onion though, because Jamie is allergic to onions. It was still great though!

Thanks for posting all the great recipes. The only thing I have made in my crockpot is beef stew and slow cooked ribs.. always looking for new things to try.. I am excited to try the new liners too. I think the worst part is cleaning it afterwards!!
