View Full Version : What to make for Superbowl LUNCH

Okay folks, so the Superbowl kickoff is 10 a.m. on Monday here, and I'm having a few expat North Americans over to enjoy the game together (everybody's ditching off work).
I want to make a half time lunch that will have an appropriately North American feel, but won't have me up at 6:00 a.m. cooking. I'm thinking Nachos and Chilli, but any and all suggestions would be helpful!

This is one of my fave dip recipes...I think it would be fun for your Super Bowl party! (and it doesn't require slaving away in the kitchen!)
Spinach Artichoke Dip
4 cloves garlic
1 10 ounce package frozen chopped spinach, thawed and drained
1 14 ounce can artichoke hearts, drained and chopped
1 10 ounce container Alfredo-style pasta sauce
1 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
1 8 ounce package cream cheese, softened
2 tbsp salt

Preheat oven to 350 degrees F (175 degrees C).
Place garlic in a small baking dish. Bake in the preheated oven 20 to 30 minutes, until soft. Remove from heat. When cool enough to touch, squeeze softened garlic from skins.
In an 8x8 inch baking dish, spread the roasted garlic, spinach, artichoke hearts, Alfredo-style pasta sauce, mozzarella cheese, Parmesan cheese, salt and cream cheese.
Cover and bake in the preheated oven 30 minutes, or until cheeses are melted and bubbly. Serve warm with chips, pita bread or crackers.

Hot Wings! Gotta have the hot wings. This is how DH does them:
Assorted Chicken wing parts
Franks (or fave brand) hot sauce
spicy honey bbq sauce
Boil or bake the wings (undressed) until almost cooked (approx 30 minutes).
Mix the wings with the two combined sauces adding hot sauce to your tastes. Bake in 350 oven for approx 15 mins. Remove and toss in the sauce again. Put them back in the oven and bake until completely cooked (usually another 20 minutes). Have plenty of papertowels handy and enjoy!
He used to fry them, but we are trying to get away from frying alot. I found that the taste is better when baked anyway.
Oh, and another thing we do for this type of gathering is:
bag of premade frozen meatballs
crockpot
spicy bbq sauce (approx 3 bottles)
throw everthing in the crock pot, cook on med for about 4 hours. This is great because you can leave it alone.
Another quick dip is one can of rotel mexican tomatos and a small block of velveeta. Throw in a small crock pot and use tortilla chips for dipping.

Taco Salad is always a hit at our Redskin's parties! Whenever we are supposed to bring a dish everyone always requests that I bring this one. Quick and easy and oh so yummy!
2 lbs Ground Beef
2 med-lg tomato (chopped)
Lg bag shredded cheddar cheese
2 cans Kidney Beans (drained)
1 Lg head Iceburg Lettuce
2 Bottles Kraft Catalina Salad Dressing (this is the key ingredient)
Brown beef and drain all grease, set aside to cool.
Tear or cut lettuce
Mix all ingredients together well and chill in fridge (although it is good warm too.
Serve over Tostidos White Corn Chips

To keep with a Tex/Mex theme, I would go with the chili, nachos and a layered dip and LOTS of beer, margaritas for me, please.... :)
Layered Dip: (I make on 2 10 or 12 inch round serving trays)
#1: 2 cans bean dip; spicy preferred
#2: mash together 3 ripe avacados, 2 tbsp lemon juice, 1 tsp pepper, 1/4 tsp cayenne and some drops of tobasco to taste
#3: 1 cup sour cream, 1/2 cup mayo, 1 pkg taco seasoning
#4: 3 tomatoes; seaded and chopped
#5: 2 cans (3 1/2 oz) chopped black olives
#6: chopped scallions (I leave this out as they don't agree with me)
#7: 1 cup shredded cheese (I like a mix of sharp cheddar and monterey jack)
If your guests like spicy, you can toss on a few chopped jalapenos. Layer #3 tastes best if you make it up the night before and let the flavors blend. Don't do that with layer #2. But you can save yourself a bit of time by prepping 3, 4 and 7 he night before and then just throwing it all together.
You can also mix up layer #3 to serve as guacamole.

Oh wow, this is all looking so yummy! Some of the recipies are going to require some modification as there are things I just can't get here - like NA BBQ sauce! It's just not the same (but I'm experimenting on how to make Bourban Honey BBQ sauce on my own!). Catalina dressing is also out of the question down under unfortunately (one of my fav things!!!).
Keep those Superbowl food suggestions coming!

chili dogs? Just make some hot dogs and warm up some chili to put on them. Add a bag of potato chips and some cupcakes and your meal is done!:party6:
I like to make up meals and made this one about 15 years ago for the first time . . . I do have several others that we enjoy often too. After some developement . . . this was the finished product . . . and we have this periodically ever since. I told a friend about it at work and this is going to be his SuperBowl Sunday meal for him and family/guests.
Ingredients:
3# to 4# HOT Italian Sausage
1 Huge White Onion
1 good sized Green Pepper
1 good sized Red Bell Pepper
(note that a Yellow or orange bell pepper can replace either of the 2 above . . . it's mostly for *color* . . . but the amount of onion and peppers once cut, should be about equal)
28 to 30 oz. of tomato sauce
Crumble and brown sausage (if in a casing, remove casing)
The liquid can be drained to taste . . . more liquid = hotter dish . . . ya don't want it too liquiddy though . . . save removed liquid in case ya wanna add some back in . . . I usually remove 50% to 75% and it is still pretty hot.
Chop entire onion and peppers into 2" strips and add . . . simmer for 30-45 mins.
Add tomato sauce and simmer 30-45 mins.
To serve:
In a bowl and use round, white tortilla chips to retrieve and devour.
or
Serve over white rice and use a fork.

You simply can't have anything football related- without buffalo chicken dip. Seriously. It's easy, too. :)
Here's the recipe from allrecipes- but read my notes at the bottom!

INGREDIENTS:
* 2 (10 ounce) cans chunk chicken, drained
* 2 (8 ounce) packages cream cheese, softened
* 1 cup Ranch dressing
* 3/4 cup pepper sauce, such as FranksŪ Red HotŪ
* 1 1/2 cups shredded Cheddar cheese
*
* 1 bunch celery, cleaned and cut into 4 inch pieces
* 1 (8 ounce) box chicken-flavored crackers
DIRECTIONS:
1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers. [i]
Now, what *I* do- is boil a couple chicken breasts for 10 minutes or so- shred them (easy to do with a pair of forks after they've been boiled), because canned chicken is expensive- and a little scary to me. :)
I also omit the cheese on top- it doesn't need it- and it makes it kind of greasy. Tortilla chips accompany this stuff well- but Bob and one of his coworkers will just eat it with a spoon! Although both would normally pick ranch over blue cheese- they both agree that the latter is better in this recipe- so I *always* try to substitute BC for ranch.
Once I've mixed everything together- I just cover it and bake at 350 until it's hot. Mix it once or so.
