I absolutely love "Back to the Table" by Art Smith and highly recommend it.
I saw him on Oprah a few years ago when I still had a moment to watch TV in the day (now I spend that time here - haha!). This is such a great cookbook. I have not tried one recipe from it that has flopped. The things may not be lightweight, it's more comfort food, but great stuff and all easy to prepare with normal ingrediants. It's where the banana chocolate chip cake recipe comes from that I just posted.
I have also tried the chicken and biquits from here, homemade mayo, sour cream waffles are the breakfast of choice in my home, buttermilk dressing, huevo rancheros, lemon pancakes with raspberry sauce (good even with normal maple syrup - really light!), berry muffins, grilled shrimp with arugula, beef brisket and to die for scalloped potatoes with sun-dried tomato pesto.
The desserts that we have tried are fatastic as well. This cookbook I my most used. With others, I will use one or two recipes, with this one, I have not been dissapointed with anything I've tried.
