Anybody know any quick and easy recipes other than Shepard's Pie-like recipes for ground beef? I buy it every week and it seems like every recipe we try is a version of Shepard's Pie. We like that dish, but I'm pretty sick of it.
I get out of work at 8 oclock so I'm hoping for something quick and easy! Thanks :D

hmmm...for me, when it doubt and have ground beef I do one of the three:
Shepards pie :D
Tacos
Spagetti
How about Lasagna? They have those no boil noodles now so it makes prep time real quick. Throw in some ricotta, mozerella and jared (I know - shame on me) spagetti sauce!

A quick and super easy recipe
1 lb ground beef
1 onion, chopped
2 cans beef gravy
1 pt sour cream
salt, pepper, italian seasoning
Egg noodles
cook egg noodles
saute onion and brown ground beef.
add in beef gravy, let heat
when hot, stir in sour cream and seasonings
let sour cream heat a little (but not too much, it still will curdle like milk does if it is let to get too high.
serve over egg noodles
this is a family recipe that is super easy and quick it serves my family when i am home and there are four of us (but i also have a 16year old brother who eats everything so it may serve 5 or 6) Hope this helps
1# ground beef
1 med onion
1 taco seasoning
1 box Mac n Cheese
Medium Pace Picante sauce
Brown meat w/chopped onion and follow directions on taco seasoning package.
Make Mac n Cheese.
Stir all together, top with Picante sauce (to your taste) and eat with tortilla chips (instead of utensils).
Double recipe for larger amounts.

Spaghetti casserole - this is really fast and good!!
Ground beef (1 pkg - lg or small)
1 large can Chef-Boyardee spaghetti w/o meatballs
1 large can Ranch Style Beans
Brown ground beef, drain, add canned spaghetti and beans. Top with grated cheese til it melts. Just make sure you get the chef-boyardee WITHOUT meatballs - I think they taste funky!!

1# Ground Meat
1 Med. Onion Chopped
1 Cup instant rice (minute rice)
2 cups chopped cabbage
2 Small cans of tomato sauce
1 Can Sauerkraut (don't rinse)
Salt and Pepper to taste
Brown meat and onion. Drain. Add rice and mix well. In a 2 Qt baking dish put 1/3 of meat mixture top with a layer of cabbage, then sauce. Continue layers until finished. Top with undrained saurkraut. cover with lid or foil. Bake in a 350* oven for 60 to 90 minutes.
Serve with Mashed 'Taters and corn bread.

If you like meatballs, just go to the freezer case and get a bag of the frozen variety that are already cooked, a 10 ounce jar of grape jelly and a 10 or 12 ounce jar of chili sauce. Microwave the meatballs, while heating the jelly and chili sauce together in a skillet. Add the meatballs and simmer for about 20 minutes. Doesn't get much easier than that. Serve with spaghetti, rice, potatos (and you can buy those yummy Shedds mashed potatos if you don't want to deal with those either) for a quick and easy meal.

How about hamburger patties with gravy?
Make your patties and fry them.
Dump the grease out of the pan but don't scrape the bottom
Add a package of onion soup mix and 1.5 cups of water
Bring to a boil while wisking the brown bits from the bottom of the pan
Mix a large tbsp of corn starch with water until thick but not chunky and add to onion soup mixture to thicken the gravy.
Return the patties to the pan and cover.
Cook on med-low for another 15 minutes.
Serve with your favorite side dishes.

You guys are making me hungry. Janet i had something similar at Denny's the other day and they smothered the hamburger with mushrooms-yummy. You can call it hamburger steak or salisbury either way they are good.

I call this one "Tater Tot Casserole". It's maybe a little Shepherd's pie-ish, but not completely. It's GOOD!
1 lb very lean ground beef
1/2 bag frozen tater tots
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
Optional: diced onion and shredded cheese
In a bowl, mix the 2 cans of soup and one can of water with a whisk until well blended. You want the mixture not too thick, but not real runny.
Take a 9"x13" glass baking dish, and smash the ground beef into an even layer across the bottom, covering the entire bottom surface.
(Optional) scatter diced onion over the top of the ground beef
Evenly distribute the tater tots over the top of the ground beef.
Pour the soup mixture evenly over the top of the beef and tots.
(Optional) spread shredded cheese over the top
Bake at 350 degrees for 30 minutes. Serve. Yum.

Florentine Meatballs
1 10 oz pkg frozen chopped spinach, thawed/moisture squeezed out
3 eggs
2 slices bread, shredded
2 teaspoons dried parsley flakes
1/4 cup Parmesan cheese, grated
salt and pepper to taste
1 clove garlic, minced
1 1/2 pounds ground chuck
1 small onion, grated or finely minced
flour
1 tablespoon olive oil
1/2 cup beef broth
1/2 cup red wine
1/2 teaspoon dried oregano
Beat eggs and mix with bread, parsley, cheese, salt, pepper, and garlic.
Add meat, spinach and onion, mixing well. Shape int 1-inch balls, roll in flour
and brown in olive oil. Remove meatballs, and in the same pan add the beef
broth and wine. Boil until reduced about 1/2. Add oregano. Put meatballs in
the crock pot and pour sauce over them. Cook for 2 to 4 hours on low.
Beef Florentine
2 cups medium egg noodles
1 1/2 pounds ground beef
2 cloves garlic, chopped
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 (8 ounce) cans tomato sauce
1/2 cup water
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) container cottage cheese
1/4 cup chopped onion
2 tablespoons grated Parmesan cheese
8 ounces shredded mozzarella cheese
Bring a large pot of lightly salted water to a boil. Add pasta, and cook for
8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F.
In a skillet over medium heat, brown the ground beef until evenly brown;
drain excess fat. Season with oregano, salt and pepper. Stir in tomato sauce
and water. Remove from heat, and stir in cooked noodles. In a medium bowl,
combine spinach, cottage cheese, onion, and Parmesan cheese. Spread half
of noodle mixture in a large casserole dish. Layer with all of spinach mixture,
then cover with remaining noodle mixture. Bake in preheated oven for
15 minutes. Cover with mozzarella, and continue cooking 10 minutes, or
until cheese is melted.

Spaghetti with Meatballs??? Here's my sauce and meatball recipe. I do 3 times the sauce recipe and 2 times the meatball recipe and cook it all up in a huge pot. Store it in tupperware containers (the freeze, micro ones). I can get about 8 meals out of one day of cooking along with small extras for grinders, etc!
Sauce
1/4 c olive oil
1 tsp onion powder
1 clove garlic, minced (I always double this!)
1 tsp dried basil
1 - 2 tbsp dried parsley
1 tsp dried oregano
1 18 oz tomato paste
1 28 oz crushed tomatoes
28 oz of water
1 tsp sugar
1 tsp sugar
2 tsp salt
1/2 tsp pepper
Low heat as long as your dear heart desires. I do mine in the morning and let it simmer, covered, all day. Be carefull that it doesn't burn on.
Meatballs
2 - 3 lbs ground beef
1 tsp onion powder
1/4 cup dried parsley
1/4 cup grated parmesan
2 tsp salt
2 tbsp italian style bread crumbs
2 eggs
1 clove minced garlic
1/2 tsp pepper
Form into meatballs, brown in olive oil in pan. Cook through, drain. Add to sauce along with stickings from pan.
If you double up, you should be able to get extra meatballs which are awesome with a smaller portion of saved sauce served as meatballs grinders with grated parm cheese on top.
Serve with a salad, garlic bread if you have it. This is an OLD recipe!!!

Double it, put in disposable pans and freeze, only issue is it takes an hour to cook. If you took it out in the morning to thaw and someone else could throw it in the oven, you'd be fine. To recap the reviews, leave out the salt (cheese has enough salt in it), add a lb of cooked hamburger to the sauce (I didn't do mushrooms) and add an additional small jar of sauce. Easy to make, really tasty and not heavy like lasagna. My family really likes this!

Me again, sorry forgot to add this in. Another dinner idea using the sauce recipe above. Save some without meatballs and make chicken parmesan with a side of pasta. Real quick, real tasty, another family fav.
Pound boneless breasts to flatten a bit. Dip in a mix of egg with a bit of milk, coat with a mix of italian style bread crumbs mixed 1/2 and 1/2 with all purpose flour. (lightens the coating) Brown in olive oil. Top with a bit of sauce and cheese. Bake in oven at 350 about 15 - 20 mins (so long as you flattened them) while you prepare the pasta.

How about an old Girl Scouts' recipe? It's called
"Hamburgers a la Foil"
(I usually make about 6 of these at a time, and freeze four, for cooking later.)
For each patty, assemble the following on a 12" square (12" x 18" rectangle is better) of aluminum foil:
1 potato cut into thin slices - half on the bottom, half on the patty
1 carrot (or more) cut into thin slices - half below, half on top
a thin slice of onion if desired
salt and pepper to taste
1/4 to 1/2 pound of ground beef formed into a patty
Wrap after layering and seasoning into a packet, and place on a cookie sheet. Bake at 350 degrees for one hour. Serve on a plate.
Simple, but tasty!

Sorry, I am just now getting a chance to chime in! My family loves this soup and it is quick and easy !It will make quite a bit.If you only using 1lb of hamburger, I would just use 1 envelope of taco seasoning.
1-2lbs ground beef
2 cans whole kernel corn undrained
2 cans kidney beans undrained
2 cans french style green beans undrained
1/4 to 1/3 block Velveeta Cheese cubed
2 envelopes taco seasoning
2 small cans tomato sauce
In a large dutch oven brown ground beef, drain. Add cans of corn and beans including liquid, add remaining ingredients. Cook till heated through.
I serve in bowls, top with crushed tortilla chips, dollop of sour cream and cilantro (optional) Looks pretty and taste so yummy!

I would say yes you should brown it and drain it before putting it in the casserole dish.

I made the dish and I never thought about that but yes I cooked it first and the dish is very yummy.
