View Full Version : Any recipes for mozzarella/Swiss cheeses?

I found out hubby doesn't really like French onion soup, and I just got a lot of mozzarella and Swiss cheese. I am hoping you have a casserole or soup dish that calls for one or both! Thank you in advance!

But at Olive Garden last night we had an appetizer that was melted mozzerella and some other cheese with the little bread wafers for dipping. For mozzerella I make lasagna, and for swiss, a bacon spinach quiche.

Swiss Chicken

Flatten 2 chicken breasts, place in baking dish sprayed with light coating of pam. Cover with a mix of 1 can cream of chicken soup and 1/4 cup white wine. Sprinkle breasts with pepperidge farm stuffing mix (don't go crazy). Lay one slic of swiss cheese per breast.

Bake at 350 for 50 - 60 mins.

For mozzarella, how about stuffed shells? Here's a recipe my family loves: http://pasta.allrecipes.com/az/StffdShllsIII.asp Changes made:
- delete salt, cheese is salty enough
- use 1 lb hamburger in place of mushrooms (browned and drained) in the sauce.
- add small can of tomato sauce to the jar of sauce

actually I am making this tomorrow evening! Get some boneless chicken breast, sliced thin or you can pound them really thin - place 1 slice ham (boiled, smoked, pepper -what you like) and then 1 slice of swiss or mozzarella - I've make it both ways - roll up very tightly.

Secure rolls with toothpicks, place all rolled up chicken in a 9x13 casserole, and pour cream of chicken or cream of mushroom soup over -- cover with foil & bake at 375 for about 1 hour, until chicken is cooked (check periodically and if it looks like the liquid is drying up, add a little chicken broth) I've also added about 1/4 cup of white wine to this, and maybe some fresh sliced mushrooms, sauteed in butter.
Remove rolls to serving plate, remove toothpicks, pour a little of the sauce over & garnish with parsley - serve with remaining sauce & rice. Great with steamed green beans and/or salad.:essen_15:
