In the chatroom today I mentioned that I had just eaten a Cherry Ripe :D
I was surprised to learn that they are not available in America. I thought someone might like to try this recipe, which turns out very similar in taste to the Cherry Ripe bars we can buy here.
Mix 8 oz crushed plain biscuits with 2 cups (6 oz) dessicated coconut and 10 oz chopped red glace cherries. Melt 4 oz butter and add to the mixture with 13 oz condensed milk, 1/2 teaspoon vanilla essence and 1/4 teaspoon red food colouring. Mix well. Press evenly into a lined 7 x 11 inch shallow tin and refrigerate. Melt 6 1/2 oz chopped dark chocolate and 2 oz butter together until smooth, then spread over the slice and refrigerate until firm. Makes 15 pieces.

Are biscuits the same thing as cookies or do you really mean biscuits?

In Oz, cookies are homemade, and just about everything else is called Biscuits :D
This recipe would mean a plain sweet biscuit, usually the type you would eat with coffee or tea (maybe dunk them :D )
Maybe Juliette could help2: with brand names?

I don't know about brand names, but most Americans, especially southern ones, see this in their head when they hear the word "biscuit."

This is exactly what I think of when some one says biscuit. This totally cracks me up! (Sorry Pauline)
It was just last night we were in chat talking about this....and I forgot it was still today (due to the time change)for you Pauline. There are a couple different items I am confused about in that recipe. Maybe we could get someone to translate to us silly Americans?! :dizzy:

I would think those are the candied cherries you use in fruit cake, or maybe marchino cherries???
dissected coconut would probably be shredded coconut.
Just a stab at it from a Canadian with British family ties.
Hmmmm, yummy ... send some our way too????

Yep, in Oz (actually in most British influenced countries including Canada) biscuits are what north Americans call cookies. What is pictured below is closer to what we would call a scone or tea biscuit.

The cherries are the type that you would put in a Fruit Cake and the coconut would be shredded, although our Dessicated Coconut is finer that our shredded coconut.
Wow I didn't realise that things would be so different over there!
