View Full Version : Isaboo's Bacon-Cheese-Barley Burgers

Makes 4 Patties

I found this recipe in Everyday with Rachel Ray Mag. It sounds yummy!!!

1/2 cup pearl barley
2 cups fat-free chicken broth
2 slices lean bacon
1 large egg
1/2 cup dried bread crumbs
1/2 cup shredded cheddar or Monterey Jack Cheese

1. In a medium saucepan, bring the barley and chicken broth to a boil over hight heat; reduce the heat and simmer, uncovered, until the barley is tender, about 20 minutes. Drain off any excess liquid. Transfer to a medium bowl and let cool.
2. While the barley is cooking, in a large nonstick skillet, cook the bacon over medium-high heat until crisp, about 4 minutes. Reserve the fat from the bacon for cooking the burgers. Finely chop the bacon and add to the cooled barley. Mix in the egg, bread crumbs and cheese. Combine thoroughly and score into 4 equal pieces. Wet your hands and form the pieces into patties.
3.Reheat the bacon fat and cook the burgers over medium heat for 4 minutes on each side. Arf-O! :)

Maybe I'll make some of these for a Christmas treat for Sailor! :)

Umm...I know these are Pupper treats..but who says humans wouldn't like these? :blush: :blush:

You're right! I was thinking the same thing! they might have to be a special treat for Sailor and me on Christmas... My husband and I have started Atkins... it's good for him... he feels better, has lost weight and has more energy, but me.... eh... not so much. I am getting discouraged. Because of the hours I work it's tough... come home at 10:30 pm, cook dinner, eat, then cook for the lunch the next day and then wake up early with my husband to cook breakfast.... I'm getting tired, and not loosing weight. I know it will take time to loose, but goodness me.... we've been on it for 2 weeks now.. oh well.. so yeah, I'm thinking I should perhaps have a "treat" on Christmas! :)
