View Full Version : Shrimp and Crab Enchiladas

12 (12in) flour tortillas
8 oz Monterey Jack cheese, shredded
1 (6 oz) can crab meat, drained
1 lb. cooked med. shrimp, shelled and devined
1 (20 oz) can green enchilada sauce
1 (8oz0 container sour cream
1 bunch green onions

Preheat oven to 350 degrees

Lay flour tortillas on a flat surface, in the middle of each tortilla place a small amount of cheese, crab, and shrimp. Set aside some cheese to sprinkle on top of the tortillas. Roll tortillas to form enchiladas. arrange side by side in a 9x13 inch baking pan.

Pour green enchilada sauce over all the enchiladas. green sauce should cover the enchiladas completely. Sprinkle with remaining cheese.

Cover and bake for 30 min. in the preheated oven. Remove cover, and continue baking for 15 minutes. Top enchiladas with sour cream and green onions to serve.
My best friend makes this a lot and its good.

Sounds good, Irma! I love seafood dishes, and hubby eats more seafood than beef or chicken - good for the files!

I'm thinking of starting to make this for Christmas Eve. Make a salad with it.

I don't cook a lot of seafood (kids don't like it) but this sounds great. However, I can't eat shrimp....any suggestions on a substitute? Maybe another 6 oz of crab plus some kind of white fish to make up the rest of the pound? I'd substitute all crab, but I think that might be too rich. I'd like to make this the next time my b/f is over for dinner.

Ask the person behind the counter where you buy seafood. I think you could substitute any fish. A firm whitefish or scallops or a mix of stuff as well. I want to try this as well, still haven't, but it is on my to do list. I may try it tonight. Having beef tomorrow, so looking for something special for this evening to have with just hubby and I. I think you just planned my evening meal - THANK YOU!!!

Irma, these were my dinner. Just pushed back from the table and all I can say is YUMMY!!!! Thank you so much for sharing this recipe. It is a definate keeper!

Made it with pepper jack cheese to spice it up a bit. Hubby thought they were fabulous and he was VERY skeptical.

I served a salad earlier made with romaine, avacado, shrimp and mine had roasted pine nuts as well. I made a raspberry vineagrette to go over it. What a fantastic evening meal we had!!!

Sandy I'm glad you like it. We had spaghetti/meat sauce tonight, garlic bread and salad.
