View Full Version : Impossible Coconut Pie

1/2 cup original bisquick mix
2 cups milk
1 cup flaked or shredded coconut
3/4 cup sugar
1/4 cup butter or margarine
1 1/2 teaspoon vanilla
4 eggs
*Those of you that like nutmeg can put a 1/4 of a teaspoon in there

1. heat oven to 350 degrees. Grease 9-inche pie plate
2. stir all ingredients until blended. Pour into pie plate
3. Bake 50-55 minutes or until golden brown and knife inserted in the
center comes out clean. Cover and refrigerate any remaining pie.

The pie makes its own crust so you don't have to worry about making one or buying one. Good for the dieters.

I've made this LOTS of times, its really good - I also sprinkle cinnamin on top, and a friend of mine puts 1 cup of mini chocolate chips in it too. :Sun2:

Upload the picture to Photobucket so you can post it. You can always delete it from there later.

Sounds like a good recipe. I love recipes & miss seeing them lately!! Thanks for sending it.

I'll be looking for that one, I'm not a big coconut lover, but anything cheesecake is a favorite for me! I used to have a Cheesecake Company store near me, BAD NEWS, I probably gained 25 lbs just walking past (ok, I have to confess, I never just walked past LOL)

HI,

I have made impossible bacon and cheeseburger pie before, and my family love them. They make a nice light supper. Actually, I first tried the bacon pie at my sister-in-laws baby shower twenty-six years ago!!

Thanks Irma!!! My uncles birthday is this saturday, my mom and I are making him a birthday dinner (since he is single and does NOT cook lol) I'm in charge of the desert, he loves coconut, this will be perfect!! :hug2:

I made this pie a few days ago and the raves from Kmart were great. I doubled the recipe.
