:wavesmile:I made crabapple jelly last night with Certo pectin. My husband said it is too sweet, 9 cups of sugar to 7 cubs of juice. Does anyone have any idea how to make it less sweet? Every recipe I have looked up as said not to cut back on the sugar, has anyone cut back on the sugar and had good results?:thanx:

Some of the pectin brands have no-sugar (for splenda) or less-sugar formulas.
I'd check those out.

I've been canning lots this year and have gotten good advice (and recipes) from here http://forums.gardenweb.com/forums/harvest/ . I know that within 24 hours you can safely reprocess if you get an answer on how to adjust the recipe.

I use Sure-Jell
http://www.kraftfoods.com/surejell/
somewhere in that link is their low-sugar and no-sugar recipe info.
