The easiest way I know to make chili is to buy Bush's chili starter in a can, then add meat. It's already got the beans and sauce. It's really tasty too. :)

I usually buy the three alarm chili kits from the store (it's got all the seasonings premeasured along with directions). Other than the kit, we get a can or two of rotel/tomatoes and 1-2 pounds of beef.... and sometimes the beans (I don't like the beans though but that's just me!). Plus cheese, don't forget the cheese to put on top! I throw everything in my crockpot and let it cook all afternoon..... so yummy!

My husbands chili is:

brown hamburger with onion
drain off fat
In a pot add 1 large can whole tomatoes that he dices up manually, 1 can mushrooms (stems and pieces), 1 can kidney beans, 6 oz can of tomato paste and a small can of diced tomatoes. Add the cooked meat to the pot. Season with pepper, cumin and chili powder to taste. Add crushed red pepper flakes for heat once you get it to taste.

I always thought I made good chili till I met my husband and he made his version for me. Now he is chili king in our house! :)

Steak & Shake Chili
2-4 servings

Steak and Shake was a franchise started in the Midwest. This is a chili which would be ideal for children. It is very mild with a slight sweetness.

2 tablespoons oil
1 1/2 lbs ground beef
1/2 teaspoon salt
1 (10 1/2 ounce) can Campbell's French onion soup
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon pepper
2 teaspoons cocoa
2 (15 ounce) cans ranch style beans or any brand chili beans
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
1 cup cola (not diet!)

Brown ground beef and salt in oil-If there is a high fat content to the ground beef you can omit the oil.
Put soup in blender, blend for 1 minute.
Add all to crock pot.
Drain beef before adding to pot.
Let simmer on low for 6 hours or on high for 2 hours.

*Add raw onion and cheese & pour it over some pasta

I used to buy Mick Fowlers chili kit - love it. BUT my hubby hates hot food... so now I have a new thing, I buy McCormicks Chili seasoning & doctor it up --
2 lbs. ground meat, browned
1 large onion chopped, 3-4 celery stalks chopped, 1 green pepper chopped - add them to the meat when the meat is about 1/2 finished...
1 or 2 cans dark red kidney beans drained & rinsed (beans are a great source of fiber!)
1 large 28 oz can crushed tomatoes.

After the meat is browned & veggies softened, I add the McCormick packet & beans & tomatoes... stir and then add some garlic powder, black pepper, more cumin (to taste) more chili powder (to taste) 1/2 tsp. sugar and let it simmer for about 45 min-1 hour and Voila. I like shredded cheese on top and sour cream if I have it in the house. :D

Hi Keri,
I just posted my Taco Soup recipe here: http://www.dachsie.org/vbb/showthread.php?p=512506#post512506
It's a lot like Chili but with a twist. Try it I think you might like it.
Plus it's a no brainer...very easy to make.

White Chili
3 pounds Chicken thighs, skinned and boned (I use chicken breast)
1 1/2 teaspoon white pepper (I use regular pepper - who has white pepper?)
1 teaspoon garlic powder
3 Tablespoons vegetable oil
1 small onion, diced
2 cans - 4 1/2 oz chopped green chilies
2 cans - 15 oz Great Northern beans
2 cans - 10 3/4 oz Chicken Broth
1 can - 10 3/4 oz cream of chicken soup
3 Tablespoons jalapeno pepper juice
2 Tablespoons minced fresh cilantro (dried from store works too)
1 teaspoon salt
a little cumin

Garnish
tortillas/tortilla chips
sour cream
mozzarella cheese
cilantro

Cut chicken up into small pieces and season with pepper and garlic powder. Saute chicken in oil in a stockpot for 3 minutes. Add remaining soup ingredients and bring to a boil. Reduce heat and simmer for 30 minutes.

If you don't want a lot of juice cut back on the broth. I didn't add any but put in an extra can of beans (the lady I got the recipe from forgot to put the broth down) and it was still really good. Also the next day I fixed up some rice and put the chili over it and it was so yummy!! This make a lot of chili so the next time I make it I'm cutting it in half. :Sun2:

Chili With Beans
4 servings

1/2 teaspoon garlic salt
2 tablespoons chili powder (or less according to taste)
1/2 teaspoon pepper
2 (8 ounce) cans tomato paste

- In a skillet on medium low heat sauté ground beef and onions.
When beef has been cooked, drain all grease and place in a medium large sauce pan.

- Add celery salt, tomato sauce, kidney beans, garlic powder, garlic salt, chili powder, pepper, water and salt, mix all ingredients.

- On low heat place a lid on sauce pan and simmer for one hour, stirring frequently. After chili has been cooking for an hour add tomato paste and stir well. Place lid on pan and simmer an additional half hour.

- Top with
Chopped Onions (to taste).
1/2 cup Shredded Monterey Jack and Colby Cheese Mix.

- Any leftover chili can be placed on crisp tortilla chips for a light lunch or a great snack.

The recipes shared sound yummy!

When I make chili, I buy either Chili Mac beans or Hunt's tomatoes seasoned for chili and follow the recipe on the can. The Chili Mac recipe is my favorite. I used veggie crumbles instead of ground beef the last time I made chili. It was good. The recipe on the McCormick's packet for White Chicken Chili is also tasty for a quick chicken chili.

Hmm, I'll have to check it out but the one I posted is quick and easy and I'm all for quick and easy. The hardest part is cutting the dang chicken.

You could buy the fajita chicken strips and just throw them in. I wait till they have chicken tenders on sale and just rough chop the chicken to size for whatever I'm making and put them in freezer bags or vaccum seal them.:hearts:
