View Full Version : HELP! Need Easy Cookie recipes

Having a cookie exchange next Monday - need 3 dozen (mixed or all the same) cookies, EASY, FAST, Christmas-y recipe to make these next weekend. Plan on doing "surprise meringues" (mostly egg whites and sugar) but would like one or two more easy, quick cookie recipes. Can you help???

How about getting from frozen suger cookie dough and rolling them out, cut, bake & decorate? Most people love a good suger cookie :D

I buy the premade peanut butter cookie dough and roll them in to balls and then roll them in sugar and bake them. Once they are about done I take them out and put a hershey's kiss in the center and pop them back in the over for a couple minutes.

Shortbread cookies. The recipe is usually on the cornstarch box. I can send it to you by pm tonight, let me know if you want it.

Icing sugar, cornstarch and butter.

i HAVE A GREAT ONE !! NOT BAKING !!! OAT MEAL COOKIES

2 cups granulated sugar
8 tablespoons (1 stick) margarine or butter
1/2 cup low-fat milk
1/3 cup NESTLÉ® TOLL HOUSE® Baking Cocoa
3 cups Quaker® Oats (quick or old fashioned*, uncooked)

In large saucepan, combine sugar, margarine, milk and cocoa. Bring to boil over medium heat, stirring frequently. Continue boiling 3 minutes, stirring frequently.
Remove from heat. Stir in oats.* Drop by tablespoonfuls onto waxed paper. Let stand until firm. Store tightly covered.
Makes about 3 dozen.

These are so yummy and look great as well. I have no clue what they are called; my sister made them with my kids last year.

Get white and dark chocolate that is used for making candy. My sis bought what is called bark coating (white and dark stuff) from Kroger's where she lives in GA and brought it up here; it's Kroger's brand.

You take Ritz crackers, spread peanut butter on them, top with another Ritz cracker. Melt the coatings in the microwave or on the stovetop if you have 2 double boilers. Dip one side of the crackers in the white chocolate, lay them on wax paper while they cool and harden. Dip the other side in the dark chocolate and lay them again on wax paper to cool and harden.

They are really tasty and look fabulous. My sis made them with my then 6 year old and he did most of the work with supervision so they truly are not difficult.

Oh, Sandy, I'd forgotten about those! It's called bark here, too - and you're right - they're easy, pretty fast, and absolutely DELICIOUS! :thanx::thanx::thanx: I'll add those to my list of possibilities.

I make these every year. They are not so much a cookie but kind of like something you would have with appies and cocktails:party014:. They are delicious!!!!:eating:

Cocktail Cheese Crisps

1 container of Imperial Cheese (1 cup)
1/2 cup margarine or butter
1/4-1/2 tsp. cayenne pepper
1 cup flour
11/2 cups Rice Krispies

Mix first 4 ingredients together & then add Rice Krispies. Roll in tiny balls & press down with a wet fork.
Bake @ 350 for 10-12 mins.

This is the best recipe for shortbread! My mother always made the best shortbread cookies. Unfortunately, after she passed away - I could not find the recipe - no one in the family had it.

Years later, when my oldest daughter was home visiting, I came home from work to find her & her sister Christmas baking. I quickly grabbed a cookie from the rack - only to discover - it tasted exactly like my Mom's. I was shocked! I asked my daughter, where she got that recipe. She picked up the box of corn starch and pointed - "right here, on the box".

My Mom would have gotten such a chuckle - all the years I spend trying to find her "special shortbread cookie recipe" - when it was on the cornstarch box all along!

Someone made some cookies to bring into work last week. Sugar cookies shaped like snowflakes, with light blue PEPPERMINT icing on them. They were really really yummy!! :eating: Usually I will try and talk someone into sharing, so I only end up eating half, but I ate two by myself they were so yummy with the mint!

The caterer that does the concessions at a lot of our agility events makes these waffle cookies... I love these things. You need a waffle iron, but they are fast an easy and VERY yummy!

Natchez Cookies

15 whole graham crackers
2 sticks butter
1 cup firmly packed brown sugar
2 tsp. Vanilla
1 + 1/2 cup chopped pecans
6 oz. semi sweet chocolate bits

Preheat oven to 350. Butter an 11 x 17 " cookie sheet. (I use parchment paper) arrange crackers side by side, edges touching on prepared cookie sheet. Stir butter and brown sugar in heavy medium saucepan over medium heat until butter melts & sugar dissolves. Add vanilla & simmer 1 min. Pour over graham crackers. Sprinkle with pecans. Bake about 10 min, till the carmely-topping turns brown. Remove from oven, sprinkle chocolate chips over cookies. Cut along graham crackers edges to separate, and then cut each one in half. Store in airtight container.

1pkg almond bark
1 can original pringles
salted peanuts

Melt the almond bark in the microwave. Once it's melted crumble about 3/4 of the chips into the almond bark. Add how ever many peanuts you want. Mix it all together really well. Plop spoonfuls onto wax paper. Let them cool. that's it :)

also for the holidays I like to add in craisins for color.

That is what the corn starch box calls them

1/2 cup corn starch
1/2 cup icing sugar
1 cup all purpose flour
3/4 cup softened butter

Sift together corn starch, icing sugar and flour. With wooden spoon, blend in butter until soft smooth dough. Shape into 1 inch balls (if dough too soft chill 30 - 60 minutes). Place 1 1/2 inches apart on ungreased cookie sheet; flatten with lightly floured fork. Decorate if desired. Bake 300F 15-20 mins or until edges are slightly bronw; cool on wire rack, makes 2 dozen

You can also roll the dough 1/4 inch thick and use cookie cutters.

My favorite cookies are EASY!!!!!!!!!!

1 box cake mix (funfetti is my fave, but yummy with chocolate and strawberry flavored too. I am sure lemon would be good as well).

1/3 cup oil

2 eggs

Mix together, put in globs on cookie sheet and cook 8-10 minutes. They are moist and everyone raves about them. I make a few dozen small cookies from one box. You can ice them if you want. I call them cake cookies! (They are definitely more cookie than cake for sure though).

Powdered sugar, I think! Or it's also called confectioners sugar. that's what I think anyway.:hearts:

icing sugar IS powdered sugar... we used to call it 10x.
