We just had these for dinner tonight and they were quite tasty! Pretty easy to make too. Definitely get the really big buns, like the Sara Lee, because these turn out to be big burgers with all of the chopped veggies and such that are in them. The ground chicken can be found at Kroger...it's made by Perdue and is next to the ground turkey.
Ingredients:
1 large egg, beaten
1/2 cup finely chopped green pepper
1/3 cup fine dry seasoned bread crumbs
2 tbsp finely chopped onion
3 tbsp finely chopped water chestnuts
3/4 tsp ground ginger
1 tsp dried parsley
1 lb ground chicken (yields 12 oz cooked)
1/4 cup bottled sweet and sour sauce
4 canned pineapple slices
Directions:
In a medium mixing bowl, combine beaten egg, pepper, bread crumbs, onion, parsley, water chestnuts, and ginger. Add chicken and mix well. Form 4 patties 3/4" thick and place burgers on unheated rack of a broiler pan. Broil 4 inches from heat for 12-14 minutes or until no longer pink, turning once and brushing with about 2 tbsp bottled sweet and sour sauce during last 5 minutes or broiling. Meanwhile, place 4 canned pineapple slices on broiler pan. Broil for 1-2 minutes, turning as needed. Serve patties on toasted buns with additional sweet and sour sauce and pineapple slices on top.
