This recipe is relatively healthy in that alot of the normal fat and oil is removed and replaced with super-healthy pumpkin. You can't beat that - get your veggies and they taste like cake!
Basically, you get a box of Spice Cake mix and empty a 15-ounce can of pumpkin into the mix. Blend with a mixer set on medium until well-mixed. If batter is too dry, add a bit of water. For something different, use carrot cake mix, or French Vanilla cake mix instead.
Cook according to package directions, but you may want to cut the cooking time a bit. Check when about 5 mins remain. Cake is a little crumbly, so will do better as cupcakes than as a layer cake or sheet cake.
If desired, add pecans or walnuts and top with cream cheese frosting.
If you want the cake to be a little more "spongy", add one egg to the mix.
