The frito salad recipe sounds soooooo good that I'm making it for our obedience club potluck next Tuesday night. :Sun2: I just have a question- it says to drain the kidney beans - do you also rinse them?

I don't rinse them.....
BUT....for my added touches.... you MUST add LAWRY's season salt and LOTS of Chili powder... lots! (not the hot chili powder.....
It's kind of a tuff one for a pot luck.... cuz the lettuce/cheese has to be cold and the meat mixture HOT..... otherwise it's not so good... just a though... BTW it cools VERY fast

Is this basically like a Taco Salad except you use Fritos?

I rinse all beans I cook with to avoid the later smell factor,lol
Actually I soak them over night.

Yes, I rinse the beans in all salads with lettuce because the juice on the beans is kind of heavy for the lettuce...IMO....making it sag a little.

This is Connie's (Schatz's Mom) recipe and it doesn't call for lettuce or meat - unless I'm missing something.:wonky: I hope it's meatless as we have several vegetarians in our group and they always have a hard time finding enough to eat at our potlucks. So, I thought that this would be a yummy dish for them, too.

Frito Salad
1 bag regular fritos
1 can dark kidney beans drained
1 can light kidney beans drained
1 package shredded cheddar cheese
1 regular bottle of Catalina Dressing
1-2 cups grape tomatoes halved

Combine Everything but fritos in a mixing bowl, refrigerate for 2 hours....add Fritos just before serving, stir together and serve.

The ones with meat sound more like my taco salad that i make.

Ok, sorry....didn't see her recipe. I use all of the above EXCEPT for that many tomatoes. Mine is a little different. I mix everthing like she does except I add chopped green pepper and chopped onion along with cooked ground sirloin that has been seasoned with chili powder,garlic and cumin powder. I make a "bed" of chopped lettuce and once everything is mixed and tossed with the salad dressing I put it on top of the lettuce and THEN put the CRUSHED fritos on top of all of that. I wait to toss it until the last minute. Once it is on individual plates....I put a little scoop of sour cream on top. Yummy good....everyone always wants more!
ALSO.....I don't do the refrigerator part. I make it right away to eat.

Yup that's the one I had (no meat and it's cold) only the one I had had chopped lettuce in it.
OH BOY was it scrumpious, I had two helpings.:D

You will have to let us know what the vegetarians thought of your salad.

My Frito recipe is meatless and does not contain lettuce. I do have the taco salad recipe that uses Catalina dressing also.

I love them both.

This is the Taco Salad I make that everyone raves about.

1 lb Ground beef (browned and drained)
2 cups Tomatoes (cut in bite size chunks)
2 cans Kidney Beans (drained)
2 cups Shredded Cheddar Cheese
1 head of Lettuce (tear or cut into bite size pieces)
1 lg bottle of Catalina Dressing

Mix all ingredients above and serve over Tostitos Chips.

This is even better the second day after the lettuce has wilted in the mixture.
I usually double, triple or quadruple this recipe for functions because it disappears so quickly.

I always drain the kidney beans, because I likewise feel it makes the lettuce soggy. Is anyone able to find Wishbone's Low Fat Russian Dressing? I used to use it before Catalina, but have not found it here in southern CA in a few years. You can use the regular Russian dressing, of course.

I brown my meat with about 1/2 of a diced Vidalia onion, stir in a package of taco seasoning, and simmer a bit. When ingredients are combined, I like to add a can of sliced olives to the mix. Then I put on a dollop of nonfat sour cream before I pour on the salad dressing.

I use the Cheesier Nacho Cheese Doritos.
