Jalepeno/cream cheese/bacon
I made these for 4th of July.. and they were a big hit. I bought 8 jalepenoes and cut them in half (took stem part of first) cleaned out the seeds, rinsed the peppers, let try, bought light cream cheese, and filled each half with cream cheese, then wrapped a slice of bacon around each one to secure cream cheese, so it wouldn't melt everywhere, and used a toothpick, to hold bacon on..wrapped four at a time in foil and put on the grill... after about 8 minutes took them out of the foil... and just laid them on the grill until the bottom of the pepper was slightly dark...They were delicious and a big hit--should have made more...this was my first time making them and I did not know how well they would go over...Bacon will not look done/dark but when you bite into it, the bacon is slightly crisp...

Hi Irma -
I just wanted to let you know that I finally made your grilled jalapeņo recipe last night when I had dinner with my brother's and sister's last night and they were so wonderful in all of their deliciousness! The farmer across the street had a big basket of them for sale for a buck so I couldn't pass them up. I can't believe that I've been missing out all of these years!!!!!!!!!!!!!!!!!!!
Anyway, I did tweak your recipe just a tad. I sprinkled the halved peppers with Morton's Nature's Seasoning and I also sprinkled the Morton's on top of the cream cheese filled peppers as well. Also, I stirred some Frank's Hot Sauce and mozzarella cheese into the cream cheese too. Finally, I squeezed a fresh lime over the top when they came off of the grill.
My brother is a jalapeņo nut but I have always passed on them but not anymore! Everyone gobbled these up and loved the fact that they weren't spicy-hot at all - even the kids at them. I will definitely make this recipe again!!! :Sun2:
