View Full Version : Pumpkin loaf recipe

If you have a loaf recipe that makes one loaf and bakes for 60 to 70 minutes or so, those always seem over cooked on the edges to get the middle cooked. What I do is increase the recipe by 1/2, divide the batter into 2 pans instead of one, and cook for about 37 min. The result is a much more moist loaf, although not as tall. I can live with that.

Penny's Pumpkin Loaf

3/4 cup margarine
1 cup sugar (I use less although the sugar amount was 1.5 cup. Recipes always seem to be way too sweet to me)
3 eggs
1.5 cup pumpkin (a 398 mL can is enough)

3 cups flour (I like some whole wheat flour mixed in)
2 1/4 tsp baking powder
3/4 tsp soda
3/4 tsp salt
3/4 tsp cinnamon
3/4 tsp nutmeg
3/4 tsp ginger
1/2 tsp cloves

Option: Choc chips or chopped nuts

1) Cream marg and sugar in bowl. Beat in eggs, one at a time until smooth. Stir in pumpkin.

2) In another bowl, combine dry ingredients.

3) Combine both bowls, stir until well moistened but not over stirred. Add chips or nuts a bit at a time while stirring.

4) Divide batter into 2 greased loaf pans.

350 F for 37 min
My pans are about 8 1/4 inches by 4 1/4 in size, metal non stick

Better for you than a toast smothered in butter for breakfast.

Ive never had pumpkin loaf, at first I thought maybe it was a recipe for our puppers but I see its for us hoomudders. Sounds delicious.

I use the recipe on the Libby's canned 100% pumpkin, and have never had it turn out wrong---just follow the directions...depending where you live, I have to use the high altitude recipe (less water more flour)
I have tried a lot of different recipes and I love this one...I usally add more cinnamon and sugar though.
I also love their pumpkin cookies.

I soooo l-o-v-e pumpkin bread/loaf, pumpkin pie, pumpkin cookies, pumpkin fudge!!!
