View Full Version : Polish Kielbasa/Sauerkraut/Applesauce

Do you like sauerkraut? How about sauerkraut that isn't "sour"? How about sauerkraut that doesn't really taste all that much like traditional sauerkraut? If you answered YES to any of the above, then I have a great recipe for you........and it's soooooo easy. I made this on Tuesday for our obedience club awards banquet/potluck and it was a big hit.
2 lbs. Polish kielbasa (I like Echrich - not as much fat)
32 oz. sauerkraut
32 oz applesauce
Cut kielbasa into about 1/2" thick rounds and brown lightly.
Mix sauerkraut and applesauce (don't drain or rinse the kraut)
Layer kraut mixture and sausage alternating in crock pot.
Cook on high for 3 hours.
This is different and yummy! Enjoy!

My mom and some of my dad's family makes it kind of the same way, but also adds apples to it. That and of course fresh kielbasa (benefit of being polish and having a grandpa who was a butcher, my uncles continue to make it)
Yumm...havent had it in a while, no fresh kielbasa here in FL.

I am polish too and love recipes with kraut but hate it on hot dogs-go figure.
A great recipe from my gram is in a large pot
brown polish sausage (you can use italian if you can't find polish, it is great this way too)
add 1/2 head of cabbage
1 large onion and saute for 5 minutes
add 2 large cans of whole tomatoes with juice cook for 1 hour on low (simmer)
add one can of kraut drained but not rinsed~ heat through and serve
Yummy!!!!!

We make it with apple juice and apples, I love it!!

Oh, that sounds yummy, too. I'll have to try it. Thanks for posting. My hubby is of German background and I think German food is in his genes LOL. I would never eat sauerkraut until I met him - go figure.

I would have never eaten this as I said I am not a sauerkraut fan. However, my Gram made it one night I was there for dinner and being good, I figured I could eat it even if it killed me, I would never hurt her feelings and she really is an amazing cook. Well I was shocked and have made it many times since myself. I sometimes add shredded carrots or chopped rutebaga too. It is a cheap but oh so satisfying meal!!! Making me hungry now

I usually drain the sauerkraut and then add water, the kielbasa I cut in chunks, and take a fork, and poke a few holes in it, and then cook them together with the kraut...I sometimes I add, smoked pork chops. Of course I have mashed potatoes, brown gravy and german bread...different regions of course make it different.

I usually add shredded apple
shredded onion
shredded potatoe
brown sugar
carraway seeds
Toss that all together and add in some regular or smoked pork chops. Yummy! It's funny because as a kid I HATED sauerkraut. Now I make it the same way my mom did and I love it.

I have had something similar to this, I cant believe all the polish people on here, my daugh. Chrisses m.i.l. moved here as a young girl from Poland, she flies out from Calf. every Thanksgiving to do the cooking, I love to taste all the polish dishes she makes, hmmmmmm delish!

Yes, thats true, I know Yaja speaks both languages. My d. Chrisses father was of german descent, in fact her last name, Kurtz, means short in german which to me is funny bc Chirss is so short.
