Birthday cake

Anyone have a good recipe for a birthday cake for my weiner boys? Their birthday is in August and I wanna bake em something special!

This is from "The Organic Dog Biscuit Cookbook"

For the cake:
2 c. oat flour
3 eggs
1/2 c. honey
2tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
2 c. pureed carrots
1/4 c. safflower oil
1 tsp. vanilla

For the frosting:
1 8-oz. package low-fat cream cheese ( at room temperature ) <-- check dif brands as salt content is higher in some low fats than others.
2 tb. honey

preheat oven to 350 deg. Peel and die the carrots, then puree the carrot pieces in a food processor.

Combine the carrots with all the other ingredients in a large bowl and mix thoroughly. Place cupcake papers in a mini muffin pain ( or regular muffin pan ). Spoon mixture evenly into the papers, filling close to the top ( the mix will not rise very much ) .

Bake 10 - 15 minutes if using mini muffin pan or 20-25 minutes if using a regular-sized muffin pan. Cupcakes are done when a toothpick inserted in the center comes out clean. Let cool completely on a wire rack.

Combine frosting ingredients together and whip until well mixed and fluffy. Decorate the cupcakes. Store the cupcakes in an airtight container in the refrigerator.


The way it all reads I have a feeling you could also pour it into a cake pan and just adjust the timing as needed. :)
